Spaghetti and Beanballs from Veganomicon
The beanball recipe from veganomicon is ridiculously delicious. The recipe reminded me of something that I use to make in my early vegetarian days from a not so great old ass cookbook. So I was a bit wary of how these would come out. I think Peter was too..he kinda made a face when I told him we were having spaghetti and beanballs for dinner. We were both very surprised at how good they were (and super easy to make). I used a very red wine heavy sauce that my maa made for us for after Reno's birth that has been in the freezer for quite some time now. Luckily the freezer has been kind to it and it was still good. I also chose to fry the beanballs instead of baking them. I highly recommend frying them. I can't imagine them tasting as good without the bits of fried outside on them.

What's great about this recipe is that it makes quite a bit (for 2 people). So you have leftovers to make delicious beanball subs the next day...

nice balls! this recipe has turned out to be such a mainstay at my place, probably *mostly* because of the leftover bean subs it can make! I'll definitely have to try it with leftover spaghetti in the bun next time, too, that looks gooood.

So you didn't have any problems with them kind of disintegrating in the sauce? I made them this weekend (expressly for beanball subs!) and although they were tasty as could be, once in the sandwich they kind of turned to mush. I suspected there wasn't enough wheat gluten in the recipe to make them stick together (so I'll try it again with more), but your images don't imply any similar problem. I wonder if I did something wrong?
I can't wait to make these beanballs. I want to do just like you did and have spaghetti and then subs!
sarah c. ... I was very careful with them while they were simmering in the sauce..the next time I make them I'm going to add a bit more wheat gluten flour just to make them a touch more sturdy.

I haven't had faux meatballs in quite a while. Usually I use tvp, but beans sound like a good bit of variety.
Looks awesome.. I've been making my own beanballs for a while, but I really should get out of my comfort zone and actually try some recipes out of all the great cookbooks I have.

haha trust me, if I didn't have such a wonderful family, I would NOT have made the brownies with chocolate - thankfully they loved every crumb/morsel of the batch :0)
yeah, I wasn't impressed with this season either, or with the winner; and did you know that apparently Tyra knew who the winner would be, halfway through the season??? HUGE controversy in the news about all this.

I have not yet seen this recipe in V-con, but I am so glad you tried it and posted about it. I love the idea of using beans instead of fake meat! yum!!
Good tip on maybe adding more gluten, but yours look like they turned out perfect.
