a post with a bit of food.



Veg w. Rice Noodles and Peanut Sauce.....if there is one food thing I love it's peanut butter in every form except for peanut butter cookies (years ago I got the flu and ate a peanut butter cookie and can't really eat them too much anymore). Anyway..I used VwaV peanut sauce recipe from the cold noodle veg dish...I hate to say it because I've loved everything else i've made from the book but I didn't really care for this sauce and had to mess around with it and now like it much better. My other problem was the rice noodles!! The package said to soak in hot water for 20 minutes. I soaked and soaked and soaked and changed the water a few times until eventually I had to boil them on the stove. What was going to be a very quick meal turned into my new hatred for rice noodles...Peter loved the dish.



Potato Pancakes w. Applesauce...need I say more..delicious!



Moors and Christian w. an Athiest....that's basically my way of putting rice and beans on my blog yet again..you just change the name! I've named the cornbread Athiest for the hell of it.



Grain Burger with. Broccoli and Potatoes...the only thing I want to talk about here are the Potatoes! I sauteed them with onions and lots and lots and lots of paprika! So delicous that I didn't want to eat potatoes any other way after them.



Puddin'....VwaV Chocolate Coconut Pudding...i was sitting around wishing i had lots of chocolate to eat one night and I think being rather spontaneous jumped up and made this pudding. Peter and I ate the whole lot ourselves in one sitting.

i'm a dope!

Such a dope! I made the best Super Bowl appertizers ever and I was in such a rush at the end packing everything up to take to our friends house that I forgot my camera which means no pictures. So sad. I plan on making everything again real soon to get the recipes down and done so I'll take the pics then. In the mean time for the party I made:

Mixed Veg Indian Pakora's with (the most delicous store bought) Mango Chutney.

Kamikaze Dumplings filled with Carrots, Spinach and Ginger. (they are Kamikaze because of my method of steaming and frying them at the same time)

Tomato Bruschetta (so simple and so good)

The following is two of the dishes i've made in the past week:



I mixed leftover chili with leftover rice and stuffed them in blue corn taco shells. I will forever make taco's with blue corn taco shells. They gave off such a nice flavor to the whole dish. I was so hungry that night that I ate not only the 3 taco's you see on the plate but a 4th as well. So did Peter. We blame the blue corn taco shells. Buy them at once!



I know i've posted about VwaV Alfreda Sauce before but this stuff is like crack. I can't get enough of it!! Everytime I go to check on the pasta I stop by the blender with the sauce and take a taste, sometimes 2 tastes. I have leftover sauce in my fridge right now and all I can think about is eating it with a spoon. I'm disgusting.

2 real meals and a cheat!

I still haven't been cooking as much as I usually do. One reason is that I just haven't been inspired to create anything. I've been cooking a lot of boring pasta's which were just way to boring and plain to actually take pictures of and post about. A co-worker of mine last week said that he hasn't heard about any of my new creations recently. Because of that comment, that night I dreamed that I was creating all this delicious food in my parents old kitchen. That dream has inspired me to cook old favorites and create new favorites that I was actually dreaming about. A lot of the dream was actually ice cream. I'm going to have to break out my ice cream machine and get to work even though it is as cold as all hell here. Here are some of the dinners I've cooked recently:



This was a delicious tamari stir fry which I added edamame to for the first time! I will now forever add edamame to my stir fries as long as I have it in house. My main stirfry rule is to add cashews. Lots of cashews.



One night I cheated and made Peter go to Whole Foods and pick up some stuff from their prepared case. For some reason I always buy there Israeli CousCous with dried cranberrys and citrus and nuts and whatever else is in that thing. But I don't really like it at all. It has the strangest taste and consistency. I remind myself that I don't like it but I still buy it. The green beans were nice and crisp. The potatoes were nasty. Never again.



An oldy but goodie! Capellini with calamata olives, sundried tomatoes, pinenuts, garlic, salt and pepper. There was something about this version that was excellent. I think I just got the proportions of all the ingredients correct this time. This pasta dish can only be made with capellini. The pasta has such a wonderful "buttery" taste to it that complements all the other ingredients.

Well I have plans for dinner tonight and SuperBowl snacks for tomorrow. I've recharged my camera batteries and erased all the nonsense off of the memory cards to photograph it all. CIAO!
