eat your veg topped off with more veg.



Curry Crusted Seitan w. Mixed Vegetables in a Butternut Sauce. I had a bit of my Fire Roasted Tomato, Butternut Soup w. Coconut and Curry that wasn't frozen and thought it would make a great sauce to a dish because it's a nice and thick soup. It worked really well and just think of the amount of vegetables you are eating! Not only are you eating the vegetables in the dish but the sauce/soup is made of vegetables. For the seitan I dredged it in a mix of chickpea flour, hot curry powder, nutritional yeast, paprika, salt and pepper. Fry up the seitan seperate from the veg so that it stays nice and crispy.



Thanks to the Urban Vegan I now have a super easy and delicious Basil Cream Sauce. I suggest everyone click on the link, copy this recipe down and make it, then save the leftover sauce and eat it for lunch the next day with a fresh batch of pasta.



Just a use up the veg in the fridge stirfry using Soy Vay Teriyaki topped off with black sesame seeds for a nice crunch.



Every wednesday I go to my sisters to watch America's Next Top Model. She burnt the box made falafel last week so I made the "real" falafel NOT out of a box w. fresh tahini sauce. Sadly I forgot to bring my camera to her apartment to take a pic of the whole meal put together.

I also made Chocolate Chip-Walnut (instead of pecan) Cookies from the Damn Tasty! cookbook for ANTM watching. Which I also forgot to photograph. But have been eating the extra dough out of my fridge for the last few days. YUM!

oooh, the curry dish, pasta with basil cream sauce (yum!), the falafel (yay, not form a box! the "real" ones are so much better), and the cookies look deeelish.

haha, I too watch America's Next Top Model - guilty as charged! ;0)

Falafels might just be my favourite thing in the world. I eat them at least once a week! Your's look great, I've never had box ones at all actually but I'm sure real ones are tastier.

I haven't tried Urban Vegans basil sauce, but that post did make me crave gnocchi, so atleast I've made that!

That's so clever to use the soup for sauce. I've come close to opening a can of Amy's for sauce, now I think I just might. I don't eat too much pasta, but I sure like to look at other bloggers that do - yum!

So glad you liked my basil cream sauce. I have yet to try it with straight pasta, but I'll take your word for it.

Hi- I made this soup last night using your recipe, and it was wonderful! My boyfriend even suggested using it as the sauce for malai kofta, an Indian dish with veggie meatballs and sweet gravy...this soup has many uses!

emmie~i wish i could eat falafel every week but then i'd get sick of eat and never want to eat it again and that would be sad.

atx~definetly try a thick soup as a sauce, besides being delicious it's also a ready made sauce that you just have to heat up.

anonymous~the reason i used the soup as a sauce is because i was thinking it would be a great indian sauce especially for malai kofta which i make alot!! thanks for trying out my recipe as well. it's really exciting to hear feedback from other people besides my husband!
