Served...Broccoli and Cashew Ricotta Calzone!!!!!

I have never had or made a vegan calzone. One of our latest potlucks was a school lunch theme..which made me thing of calzones. I loved cafeteria calzones. Now I would probably vomit if I ate one. They also didn't have broccoli or real ricotta cheese in them. There were just some tomato sauce and weird cheese.

My calzone has super garlic sauteed broccoli and V'con cashew ricotta in it. That's it. Nothing else needed except for some tomato sauce to dip in, which isn't pictured. I truly believe you can make this and feed it to a non vegan and they would have no idea it was made with tofu.


And now onto our School Lunch Potluck:



Sloppy Joes, PB+J, Baloney + Mustard, Chips.


Seriously?? We were disgusting as children. This was a fun meal to eat but you just felt gross after it. My sister's dish was the Sloppy Joe made with lentils. I brought the PB+J's cuz that's all I ate as a kid, Steve and Becky contributed the Meatless Baloney and Mustard Sandwich. Now I've never eaten real or fake Boloney before this. I am happy to say I will never eat real or fake baloney again. It wasn't bad but it wasn't good either.



Rice Krispie Treats + Chocolate Chip Cookie


Who didn't eat these treats as a kid. They were a perfect ending to the school lunch meal.

Every year the local veg group that my roommate and I run have a school lunch potluck, too! It's such a fun potluck - lots of simple, tasty foods that we all remember from our childhood.

school lunch potluck... sounds so gross and yet kind of indescribably enticing. I kinda want a plate of what you guys were having. :P

and those calzones look amazing, I just ran into a windfall of cheap cashews and a bunch of omnis to impress... this is a good idea!

I agree that that calzone looks SO good. The crust looks baked just right. All it needs is a side of spiced tomato sauce... Mmmm.

Are those Snobby Joes over there? I enjoy Snobby Joes so!

I remember back in school when they would give us a "bag lunch" that included real meat sandwiches like that baloney one. I wasn't impressed then... still not impressed now... Heheh.

SOunds like a fun potluck theme, but I would've felt a little ill afterwards as well!
Love the calzone filling! I would eat that for lunch anyday :-)

OMG, I want that calzone! What a fun theme party, we did a white trash party once & the food was delicious! I used to eat baloney & ketchup sandwiches every day as a kid; so gross!!!
